Spinach and Ricotta Pillows.

I found that when these were baked the Guides did not particulary enjoy them cold. However when used as dim sims and quickly boiled they ate them with relish.

Makes 12

100g baby English Spinach
75 g Ricotta Cheese
2 tablespoons grated Parmesan Cheese.
Black Pepper
12 Won Ton wrappers
Olive Oil spray

1. Preheat oven to 200 Deg C. Line a baking tray with baking paper.
2. Wash spinach and put into a pan. Cover and cook for (medium heat) for 5 minutes – or until wilted. Cool slightly, then squeeze out any moisture and finely chop.
3. Put chopped spinach, ricotta and parmesan cheese into a bowl and mix to combine. Season with pepper.
4. Place 1 teaspoon of filling into the centre of each won ton wrapper, brush the edges with water and fold over to form a triangle. Press the edges with a fork to seal.
5. Place pillows on the prepared tray and lightly spray with oil. Bake for 15 minutes or until crisp and golden.
